Syrnyky (cottage cheese pancakes)

Ideal solution for breakfast on weekends, especially for kids.

Cottage cheese is very nutrient-enriched food for children and adults, but usually kids refuse to eat it. If you have no idea how to encourage your kid to eat this product, then traditional Ukrainian cuisine will help you. Let’t cook fragrant and translucent syrnyky!

This is a simple dish which is usually cooked for breakfast or as a dessert. Syrnyky is soft inside and crispy outside. Original recipe contains cottage cheese, eggs, flour and spices, but you can also add raisins, apricots halves, and other dried fruits. If you have seasonal fruit, you can use cherries, apricots, raspberry to make your dish more nutrient-enriched.

Ingredients:

  • 500 g cottage cheese
  • 1 egg
  • 4 tbsp of sugar
  • 1/4 tbsp salt
  • 3 tbsp flour

Cooking

Mix properly cottage cheese, egg, salt and sugar in a large bowl. Add flour and knead the dough. Check the consistency. Probably it will be necessary only 2 tbsp of flour.

Make balls from the dough. After add some flour on the plate and cover the balls with flour. Shake off odd flour. Heat the vegetable oil in the pan and fry cheese pancakes. They should have a golden color.

Serve with sour cream or jam. You may also serve surniki with tea.
