Adzhyka sauce

This adjika sauce is very tasty and savoury. You can use it as a natural substitute of ketchup. Besides, this sauce can be kept in a fridge or in some cold place for a long time.

Ingredients:

1 stage

  • 5 kg of fresh tomatoes
  • 1 kg of carrots
  • 1/2 kg of sweet peppers
  • 2 tbsp of salt
  • 2 tbsp of sugar
  • 60-70 ml of vinegar (9%)
  • 1 kg of apples

2 stage

  • 60-70 ml of vinegar (9%)
  • 1 tbsp of sunflower oil
  • 2 tbsp of salt
  • 2 tbsp of sugar
  • (if tomatoes aren’t sweet, you may use more sugar)

3 stage

  • 10 garlic bulbs (300 g)
  • 2-10 red capsicums (to taste)
  • 2 tomatoes

Cooking

1 stage

Wash and peel vegetables. Cut and mince them. Place the ingredients in a big pan, mix and boil for 1 hour.

2 stage

Add vinegar, sunflower oil, salt and sugar to the pan. Mix everything properly and boil 1 hour more.

3 stage

Then add finely chopped capsicum and squeezed garlic. Stir the madd and boil for 15 minutes. Pour the cooked adjika sauce in jars. Cork the jars up. Turn the jars upside down and cool them.
