Baked cabbage with tomatoes

tushenaya-kapusta-s-bolgarskim-percem1It’s no secret that baked vegetables preserve vitamins, so this dish is definitely healthy. Plus, it is rather nourishing. This baked cabbage with tomatoes is recommended to serve with boiled potatoes.

Ingredients:

  • 500 g (1,1 lb) fresh cabbage
  • 1 bulb onion
  • 5 green bell peppers
  • 1 kg (2,2 lb) tomatoes
  • 50 ml apple juice
  • 150 g (0,33 lb) smoked salo (lard)
  • 1/2 tsp squeezed garlic
  • 1/4 tsp caraway seeds
  • paprika – to taste
  • salt – to taste
  • fresh dill/ parsley

Cooking

Wash and chop cabbage. Peel and cut an onion finely. Add squeezed garlic, salt, pepper and caraway seeds. Mix all the ingredients together and then add the cabbage. Wash bell peppers, peel and slice them. Wash tomatoes, peel and dice them. Cut salo into thin slices and put them above a baking sheet. Place some cabbage above, then pepper, tomatoes and again cabbage. Combine 50 ml of water and 50 ml of aple juice. Mix everything properly. Pour the mixture above the ingredients. Place some slices of salo above. Place the sheet in an oven and bake the dish for 30 minutes. Place the appetizer on a plate and decorate it with fresh dill or parsley twigs.
