Banana pancake cake with icing

This cake has an incredibly soft cream cheese filling and is covered with rich icing and shredded walnuts.

Ingredients:

  • 4 tbsp dairy butter
  • 1 banana
  • 235 ml milk
  • 95 g (3,5 oz) flour
  • 4 eggs
  • 2 tbsp brown sugar
  • 1/2 tsp vanillin
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • a pinch of ground cloves
  • dairy butter (for frying)

Filling

  • 225 g (1 cup) cream cheese
  • 345 g (12 oz) yoghurt
  • 5 tbsp sugar
  • 1/2 tsp vanillin

Icing

  • 120 ml cream (high-fat)
  • 4 tbsp brown sugar
  • 1 tbsp dairy butter
  • 7 tbsp shredded walnuts
  • 1/2 tsp vanillin
  • salt – to taste

Cooking

Peel a banana and cut it into medium pieces. Place the fruit in a blender and whip. Then add dairy butter, milk, flour, eggs, brown sugar, salt, vanillin, cinnamon, nutmeg, and ground cloves. Beat the ingredients properly until well combined. Pour the prepared batter in a bowl, cover the bowl with food wrap and put it in a fridge for at least 1 hour.

Whip the chilled batter properly. Preheat the skillet and brush it with dairy butter. Next add a ladleful of batter tilting the skillet to spread. Fry the pancake on both sides until golden brown. Repeat until you use all the batter. Set the pancakes aside for a while.

Whisk the cream cheese. Add yoghurt, sugar, and vanillin gradually. Whip the mixture till homogenous and smooth. Arrange the pancakes one above another and grease each layer with the filling. Grease the upper layer with the prepared filling as well.

Let’s cook the icing. Whip the cream together with brown sugar and dairy butter over medium speed. Then pour the mass to a pan. Bring it to boil, reduce the fire and boil the icing for 10 minutes stirring it continuously. Then add vanillin, salt, and ground nutmeg. Stir everything carefully. Top the cake with the icing immediately. Cut it into portions and serve.
