Bonito under mushroom sauce

 

Once you try fried bonito with mushrooms and bulb onion, this second course will become one of your favorite fish dishes.

Ingredients:

  • 1 kg (2,2 lb) bonito
  • 330 g (0,73 lb) dried mushrooms
  • 400 ml high-fat cream
  • 1 juicy tomato
  • 1 red bulb onion (a big one)
  • ground black pepper – to taste
  • sea salt – to taste
  • mushroom seasoning – to taste
  • dairy butter

Cooking

In order to cook the dish you need the whole fish. The fillet will not be enough.

Flush out bonito. Next peel and scale the fish. Cut the bonito into portions and rub them with pepper. Then top the bonito with salt.

Preheat dairy butter in a frying pan. Brown the fish on both sides over high heat turning the pieces of the bonito each 10 seconds.

Peel bulb onion and cut it into big semi-circles. Pour the mushrooms with boiling-hot water and leave them for half an hour. Cut the mushrooms into pieces if their size is rather big. Scald tomato and peel it. Then shred the vegetable.

Fry the onion in a clean frying pan. Next add mushrooms and stew them over low heat for 7 minutes. Then add the tomato mass, stir the ingredients and cook them 3 minutes more. Season the dish with salt and pepper. Pour cream above and stew everything for 3 minutes.

Put the browned bonito in the sauce pan, add some water. Let the fish simmer under a lid for 4 minutes. You should not overcook the fish, in other case you get the fish “mash”.

Serve the bonito with fried potato pouring all ingredients abundantly with the prepared sauce.
