Carrot and Beetroot Salad with Lemon Oil Dressing

Nevertheless, that this salad has only two main components – carrot and beet, it is amazingly tasty and piquant thanks to its oil dressing. Packed full of great flavors of lemon juice and olive oil, this salad becomes irresistible even to people who think they don’t like beetroot.

This salad is very bright, crunchy, and nutritious. Mixed carrot and beet give awesome ruby-pink color to the salad so that it will become a winner on your dinner table.

This salad is recommended to be served as a side to a chicken, turkey or lamb.

Ingredients:

  • 1 carrot
  • 1 beetroot
  • 1 tsp olive oil
  • a pinch of salt
  • 20 ml lemon juice
  • fresh parsley – to taste
  • celery root – to taste

Cooking

Peel a beetroot and carrot. Wash the vegetables and slice them thinly. Wash fresh parsley and chop it finely. Peel, wash, and grate a celery root. Combine all the ingredients in a deep bowl.

Combine lemon juice and olive oil. Add a pinch of salt and whip the mass. Mix the salad with the prepared dressing. Decorate the salad with fresh parsley and put it in a fridge for a while before serving.
