They are fluffy and light, have tender cheese texture with raisins and delicious flavor of lemon.
These pancakes include fresh cottage cheese which is a good source of calcium. That is why this product is very good food for children whose growing body needs calcium. Children often don’t like cottage cheese. However if you cook these amazing cheese pancakes for breakfast or brunch, they’ll eat them in a matter of minutes.
- 1 egg
- 1/2 lemon
- 100 g (3,5 oz) flour
- 100 g (3,5 oz) raisins
- 2 tbsp granulated sugar
- 150 g (5 oz) dairy butter
- 400 g (14 oz) cottage cheese/curd/quark
- salt – to taste
Place cottage cheese in a bowl. Add a raw egg, sugar, and salt. Then add some lemon juice and lemon zest. Place raisins in a separate bowl and pour them with boiling water. Then pour off the water and wash raisins under running water. Combine the raisins with flour. Add the mixture to the cottage cheese. Stir the ingredients carefully.
Take a bit of the mixture with a spoon and make a ball. Make a cake from the dough ball. Repeat the procedure until you use all the mass.
Preheat dairy butter in a skillet. Fry the cheese pancakes on both sides until golden and crispy.
