Cherry rolled cake

Ingredients:

Dough

  • 1 egg
  • 1 yolk
  • puff paste
  • a pinch of salt
  • 1 tsp lemon juice
  • 2 tsp dairy butter
  • 250 g (1/2 lb) flour
  • 1/3 l (liter) warm water
  • powdered sugar – to taste

Filling

  • 1 tbsp sugar
  • 2 tbsp ground rusks
  • a pinch of cinnamon
  • 750 g (5 cups) pickled cherries
  • 100 g (3,5 oz) ground hazelnuts

Cooking

Toss puff paste, flour, an egg, dairy butter, salt, lemon juice and warm water together. Mix everything until you get homogenous mass. Knead the dough for 5 minutes more until it becomes smooth and elastic. Set the dough aside for half an hour. Then roll it thinly.

Grease the dough with melted dairy butter. Combine nuts and rusks and brown them slightly. Add cinnamon and cool the mass. Spread half of the prepared mass above the dough. Put rinsed and dried cherries above. Top everything with the remaining nut mass. Make a roll and place it in a baking cup covered with parchment paper. Grease the roll with yolk and bake for 45 minutes at 200°C (392°F).
