Chicken that is slightly fried and rolled in a flatbread together with juicy lettuce leaves, crunchy cucumber, and soft cheese, this just cannot but make your mouth water.

These filling and delicious rolls are great if you’re planning to have a family party. They can be cooked ahead of time and when all your relatives will gather in the living room, you won’t need to spend your precious time in the kitchen.

This snack can also come in handy if you’re going on a weekend trip. You just pack the rolls and take them with you.

The recipe is highly adaptable to your preferences. You’re free to use whatever type of flatbread you have at hand. Plus, you may grease your rolls with sour cream and tomato paste or mayonnaise and ketchup, depending on whether you want to cook a healthy or less useful but no less tempting version.

So, when a fast and easy lunch recipe is a need, this fun and solid snack hits the spot, just try and see yourself!

Ingredients:

  • 1 fresh cucumber
  • 7 – 8 lettuce leaves
  • 1 flatbread (lavash)
  • vegetable oil (for frying)
  • 100 g (3,5 oz) hard cheese
  • 1 tsp tomato paste/ketchup
  • 1 tbsp sour cream/mayonnaise
  • a couple of fresh parsley twigs
  • 250-300 g (7 – 10,5 oz) chicken breast
  • ground black pepper – to taste
  • sesame seeds – to taste
  • salt – to taste

Cooking

Cut the chicken breast into thin slices. Preheat vegetable oil in a frying pan. Transfer the meat there and season it with black pepper and salt. Fry on both sides until fully done.

Wash and dry lettuce leaves and cucumber.

Arrange your flatbread on a table. Grease the half of it with sour cream (if you want a lighter version) or with mayonnaise (to get a more hearty roll). At first we’ll arrange lettuce leaves. Put the fried chicken slices above them. Cut cheese into thin slices and put them next to the lettuce. At the end add cucumber circles. Finish with a ketchup “wave” or you may use tomato paste if you wish. Top with sesame seeds. Roll the flatbread into a cylinder. Grease its edges with sour cream/mayonnaise to stick them. Cut the roll into medium pieces and serve them in a bowl covered with lettuce leaves. Garnish with several cucumber circles and fresh parsley twigs. Let stand for 20 minutes and you can serve or keep in the fridge, covered.
