Chicken leg quarters in a pumpkin pot

 

Ingredients:

  • 2 little pumpkins
  • 4 little chicken leg quarters
  • 4 potatoes
  • 1 eggplant
  • 100 g bulb onion
  • 1 clove of garlic
  • 200 ml cream (20%)
  • 100 g cheese
  • sunflower oil
  • salt – to taste
  • ground black pepper – to taste

Cooking

Boil chicken leg quarters in slightly salty water for 10-15 minutes. Cut pumpkins into two. Remove the seeds and the pumpkin flesh. The pumpkin rind should not be destroyed. Peel and cube bulb onions. Peel garlic and squeeze it. Peel and cube eggplant.

Fry the eggplant on sunflower oil and place it in a bowl. Peel and cut potato. Fry it on sunflower oil. Add it to the bowl. Peel, cut and fry the bulb onion until it becomes clear. Combine the fried vegetables and garlic in the bowl. Season the ingredients with salt and pepper.

Place the chicken leg quarters and the vegetable mixture in the pumpkins. Cover the baking sheet with foil. Place the pumpkins there. Pour them with cream and cover everything with foil. Preheat the oven to 180°C and bake the dish for 1 hour.

Grate cheese and top the pumpkins with it. It is not necessary to bake the dish after the procedure again because the cheese will melt itself in a couple of minutes.

Serve the dish hot with vegetable salad.
