Chicken, Pork, and Beef Kholodets

Kholodets is a jelly-like dish from meat broth. It gets its name from ‘kholod’, the Ukrainian word for cold and is traditionally served in Ukraine during winter holidays.

When served, kholodets has the shape of the basin where it was chilled. The meat pieces are clearly seen through the transparent broth-turned jelly. Kholodets is served cold as an appetizer with hot mustard or strong horseradish sauce.

Today we are going to cook special kholodets which includes the combination of chicken, pork, and beef. It both tastes and looks amazingly good.

Ingredients:

  • 2-3 tbsp salt
  • 1 garlic bulb
  • 2 bulb onions
  • 200 g (7 oz) beef
  • 200 g (7 oz) pork
  • 4-5 cm ginger root
  • 200 g (7 oz) chicken

Cooking

Rinse chicken, pork, and beef thoroughly. Place the pork and beef in the pan with water. Boil the ingredients for 1-2 minutes. Then drain off the water and wash the meat again. Place the meat in the pan again. Add the chicken. Pour the ingredients with cold water. Bring the water to boil. Scim the broth.

Salt the broth, add peeled bulb onions and 4-5 garlic cloves. Then add a peeled and chopped ginger root. Cover the pan with the lid and boil everything over low heat for 7-8 hours, stirring from time to time. Then remove the onion, garlic, and ginger. Place the meat on a plate and filter the broth thoroughly till you get a clean broth. Cut the boiled chicken, beef, and pork finely. Mix everything carefully. Peel some garlic cloves more. Squeeze the garlic and add it to the meat. Arrange the ingredients in the bowls or basins evenly. Pour the broth above. Place the bowls/basins in a fridge until our kholodets sets completely.

Serve with horseradish sauce or mustard.
