Corn Pancakes

These appetizing, fluffy, yummy, and simple pancakes will take your breakfast to a new level of goodness.

These pancakes come off the skillet crispy at the edges and soft inside. The fried corn adds special graininess to the whole dish and helps turn traditional pancakes into amazing yellow little miracles.

Ingredients:

  • 1 egg
  • 1 tsp salt
  • 1/3 cup of milk
  • 2 cups of fried corn
  • 1/3 cup of corn flour
  • 1/4 cup of wheat flour
  • 1/2 tsp baking  powder
  • 1/4 tsp black ground pepper
  • vegetable oil – for frying
  • fresh parsley – to taste

Cooking

Combine corn flour, wheat flour, baking powder, salt, and pepper.  Stir to combine.  Add finely cut parsley, egg, and milk. Mix everything with a wooden spoon. Then add fried corn and stir the ingredients thoroughly.

Preheat vegetable oil in a frying pan. Spoon out the batter, making any size pancakes you like.

Fry pancakes on both sides until golden, 5 minutes each side. Serve corn pancakes at once.
