Meat and vegetable dish – Dushenyna

Dushenyna is the old Ukrainian dish. The main ingredients of which are meat, vegetables, and spicery. In most recipes these components are dressed with flour, however not all variations of the dushenyna recipes contain flour.

Ingredients:

  • 1 kg ham
  • 300 g kidneys
  • 50 g dairy butter
  • 500 g meat broth
  • 50 g garlic
  • 50 g dill / parsley
  • 1 sweet pepper
  • salt – to taste
  • black ground pepper – to taste
  • a bay leaf

Cooking

Boil kidneys and cut them into medium-size pieces. Slice ham, beat it, add salt and pepper to the meat. Fry it. Combine ham, kidneys, bay leaf, and meat broth in a pan. Stew the ingredients.

Powder dushenyna with finely chopped garlic, sweet pepper, parsley, and dill before serving.
