Cook with us the Easter cake which is called paskha in Ukraine. If you want to decorate a feast table then this recipe for the Easter cake ‘Wreath’ will definitely come in handy. It is also possible to experiment with various fillings – you may add nuts, dried fruits, etc.
Ingredients:
- 1 yolk
- 640 g (22,5 oz) flour
- 130 g (4,5 oz) sugar
- 50 g (2 oz) melted dairy butter
- a package of yeast powder
- 2 eggs
- 250 ml milk
Filling and icing
- 4 tbsp powdered sugar
- 2 tbsp dairy butter
- 50 g (2 oz) raisins
- 50 g (2 oz) candied fruit
- 2 tbsp cognac
- 2 tbsp sugar
- 2 tbsp orange juice
- fruit candy – to taste
Cooking
Dissolve yeast in warm milk. Add 1 tbsp of sugar and 1 tbsp of flour. Mix the ingredients. Leave the mass for 30-40 minutes. Whip the eggs with the remaining sugar, add dairy butter and the cooked predough. Stir in the remaining flour gradually. Mix everything carefully. Put the dough in a warm place for 1,5 – 2 hours.
Scald raisins, dry them and pour cognac above. Set aside the raisins for 30 minutes.
On a well-floured space, roll the dough into a thin layer. Grease it with melted dairy butter. Spread the raisins and candied fruit above evenly. Top them with sugar. Roll up the dough and place it in a baking sheet covered with foil. Then shape the roll in a form of a ring. Join the edges. Make cuts all around the cake. Put the cake in a warm place for 20 minutes. Grease the roll with a yolk and bake it at 200°C (392°F) for 20-25 minutes.
Let’s cook icing. Mix powdered sugar with orange juice until you get a homogenous mass.
Transfer the cooked roll on a platter, cover it with a napkin. In 10-15 minutes grease the roll with the icing. Decorate the Easter cake with fruit candy.
