Gingerbread cake


This awesome gingerbread cake with cinnamon, nutmeg, and cardamom will become the perfect idea for your festive table.


  • 270 g flour
  • 1 tsp soda
  • 2 eggs
  • 50 g dairy butter
  • 100 syrup
  • 100 g brown sugar
  • 100 ml heavy cream
  • 150 ml milk
  • orange peel
  • 1 tsp cinnamon
  • 2/3 tsp nutmeg
  • 1/4 tsp cardamom
  • 1/2 tsp ginger

Hard sauce

  • 75 g brown sugar
  • 150-250 ml cream
  • 550 g cream-cheese


Froth eggs with brown sugar. Add syrup and mix the ingredients. Then pour melted dairy butter, milk and cream. Stir everything thoroughly.

Combine flour, grated orange peel, soda, cinnamon, nutmeg, cardamom and ginger. Mix all the prepared ingredients carefully and pour 1/3 of the dough in a baking sheet. Bake the cake at 180°C for 20-25 minutes. You should cook 3 crusts.

Hard sauce

Whip the 550 g of cream-cheese. Add cream (approximately 150-250 ml) bit by bit. The sauce should increase in size but it shouldn’t become too fluid. Next add brown sugar. Stir the mass.

Grease each baked crust with the prepared hard sauce and then place the pie shells one above another.

Decorate the cake with a mandarin and grapes topped with powdered sugar. You may also put some cinnamon sticks above.
