Halibut chop

 

Ingredients:

  • 800 g halibut
  • 1 lemon
  • 250 ml water
  • 250 ml white wine
  • 1 tbsp vinegar
  • 1/2 tbsp salt
  • 1 bulb onion
  • 4 black pepper berries
  • 1/2 tsp cloves
  • 1 bay leaf
  • 2 tbsp dairy butter
  • 1 tbsp flour
  • 1 tbsp capers
  • a pinch of salt
  • a pinch of sugar
  • 1 yolk
  • 2 tbsp cream
  • some lemon slices (for accompaniment)

Cooking

Divide halibut into 4 parts and beat each piece of the fish in order to get chops. Squeeze one lemon. Dry the halibut a little and sprinkle it with lemon juice. Leave the fish for 10 minutes.

Combine water, wine, vinegar, salt, peeled and cut bulb onion, spices and bay leaf in a big pan. Mix the ingredients, bring them to boil and cook for 5 minutes. Parboil the halibut chops over low heat for 15 minutes. Place the chops on a platter and filter the fish broth.

Melt dairy butter in a pan. Add flour and fry the mass until it gets a light yellow color. Then pour the fish broth there. Bring it to boil. Combine capers and the prepared sauce. Season it with salt and pepper.

Combine yolk with cream, add 2 tablespoons of hot sauce. Turn off the fire and mix the sauce and the mixture of the yolks and cream.

Slice lemon. Pour the chops with the cooked sauce, decorate them with a lemon slices and serve.
