Herring and Vegetable Salad

This flavor-packed salad is filled with lots of stuff! It includes the combination of fresh and boiled vegetables, eggs, and light-salted herring. All the ingredients are layered on a serving plate so the layers can be seen in all their colourful beauty.

This salad is a good alternative to traditional herring, beetroot, potato, and onion salad. It includes some new and fresh ingredients which perfectly complement light-salted herring. Just try to cook!

Ingredients:

  • 2 eggs
  • 1 tomato
  • 1 beetroot
  • 1 cucumber
  • 1 bulb onion
  • some twigs of fresh dill
  • 200 g (7 oz) light-salted herring
  • black ground pepper – to taste
  • mayonnaise – to taste

Cooking

Wash a tomato and cucumber. Dice the vegetables. Rinse a beetroot and boil it. Peel the beetroot and cut it into medium pieces. Boil eggs, peel and cut them finely. Peel a bulb onion and slice it thinly. Cut herring into medium pieces. Layer the salad in the following order: beetroot, herring, mayonnaise, cucumber, onion, tomato, black ground pepper, eggs, mayonnaise, herring, and beetroot. Decorate the salad with fresh dill and serve.
