Herring, apple and cranberry salad

The herring and apple salad with lemon and cranberries has an exotic combination of ingredients.

Ingredients:

  • 2 pickled herring fillets
  • 1 apple
  • 1/4 lemon
  • 1 bulb onion
  • 50 g sun-dried cranberries
  • 2 tbsp olive oil
  • some dill twigs

Cooking

Cut herring fillets into medium slices. Peel an apple and slice it. Peel and cut into semi-circles a bulb onion. Pour sun-dried cranberries with a boiling water for 15 minutes. Then dry the cranberries. Wash a lemon and cut the half of it into thin slices.

Combine the herring, apple, cranberries and onion. Sprinkle the salad with a lemon juice (squeeze the left lemon). Season the salad with olive oil. Decorate it with dill twigs and lemon slices.
