Kidney beans po-verkhovynsky (Zakarpatye recipe)

 

Ingredients:

  • 250 g kidney beans
  • 300 – 350 g shiitake mushrooms
  • 2 bulb onions
  • 2 carrots
  • 500 ml sour cream
  • 300 ml dairy cream
  • 2 tbsp flour
  • 3 tbsp tomato paste
  • salt – to taste

Cooking

Soak kidney beans for 5-6 hours. Then boil them in salty water.

Preheat butter in a frying pan. Grate carrots and cube bulb onions. Place the ingredients in the frying pan and brown them. Cut shiitake mushrooms and place them in the frying pan. When the mushrooms redden, pour dairy cream. Stew everything for 10-15 minutes. The add tomato paste and mix the ingredients.

Mix flour and sour cream until smooth in a separate bowl. Add the cooked mixture to the frying pan. Boil until it gets thicken. Then add boiled kidney beans and cook dish for 5 minutes more.
