Mushroom stuffed chicken thighs

Mushroom stuffed chicken thighs is a simple and at the same time unique dish. If you endeavor a little you will get a rather presentable, nourishing, tasty and healthy dish. You can enjoy the thighs at a family dinner and you can treat the guests as well.

Ingredients:

  • 5 chicken thighs
  • 100 g (2 1/5 lb) champignons
  • 1 bulb onion
  • 1 bell pepper
  • 1/2 tsp ground nutmeg
  • 1-2 tbsp vegetable oil
  • parsley – to taste
  • salt – to taste
  • ground black pepper – to taste

Cooking

Peel a bulb onion and champignons. Chop the ingredients. Rinse and cube a bell pepper. Preheat oil in a skillet, fry the onion until translucent. Add champignons and 1/4 cup of water. Cook the ingredients until water dissolves completely. Toss the fried mushrooms, pepper and chopped parsley in a bowl. Add salt, black pepper, nutmeg and mix everything properly.

Loosen skin on chicken thighs. Move at thigh end to middle of drumstick. Spread the filling evenly between the thighs and tie with toothpicks to secure the filling. Place the drumsticks on a preheated frying pan with vegetable oil. Fry them on both sides till crisp. Cook the chicken over medium heat for 15-20 minutes until done.

Serve the chicken thighs with fresh vegetables or garnish.
