Pie stuffed with stewed cabbage

pirog-s-molodoj-kapustoj_5767If you want to cook a flavorful, crisp and appetizing pie which can be served as an appetizer and as a main dish, then note the recipe. The secret of this pie is that you can cook it with fresh or sour cabbage. The cabbage pie is considered to be a multi purpose dish. It is easy to bake, it costs cheap and you can feed the whole family while the pie is nourishing.

Ingredients:

Dough

  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp leaven
  • 1/2 tsp sugar
  • 1/2 tsp sesame
  • 200-250 ml kephir/
  • fermented baked milk/ curdled milk
  • 200 g (7 oz) margarine/ dairy butter

Stuffing

  • 1 carrot
  • 2 bulb onions
  • 1/2 head of cabbage
  • 50-100 ml sunflower oil
  • black ground pepper – to taste

Cooking

Peel a carrot and bulb onions. Wash the vegetables. Fine grate the carrot, cut the onions into semi-circles. Rinse cabbage and slice it thinly.

Pour oil in a skillet and heat it. Fry the onion until translucent. Add the carrot and sauté for a couple of minutes, stirring. Put the cabbage in the skillet. Salt, pepper and stir the ingredients. Stew them under covered lid until the cabbage is half-done. Next remove the fire and open the skillet.

Melt margarine or dairy butter. Pour kephir (fermented baked milk or curdled milk) in a deep bowl. Add 1 egg and leaven. Mix everything by the help of a whisk thoroughly. Add salt and the melted margarine. Then add flour gradually stirring the ingredients continuously. You should get tough dough. Cover it with a napkin and set aside for 15-20 minutes.

Grease a baking sheet with butter. Divide the dough into two parts (the first part should be bigger in size). Roll the dough (the layer thickness should be 1-1,5 cm). Place the dough above the sheet. Add the cabbage stuffing and flatten it. Roll the second part of the dough. Top the pie with it. Crimp the edges carefully. Make some cuts by the help of a fork.

Preheat the oven to 180-200°C (356-392°F). Place the pie in an oven and bake till golden crust. Grease the pie with an egg at the end of baking. Top it with sesame, cover with a napkin and leave for 20 minutes (to impart the pie softness).
