Ukrainian Pie – Pliatsok “Orchid”

Pliatsok is homemade sweet pastry baked mostly in the Western Ukraine. Today we are going to bake this great cake with meringue and hard sauce.

Ingredients:

Dough

  • 3 eggs
  • 200 g (7 oz) sugar
  • 1 tsp leaven dissolved in sour cream
  • 3 tbsp cocoa
  • 320 g (11 oz) flour
  • 1 tsp soda dissolved in vinegar
  • 2 tbsp sunflower oil
  • a pinch of salt

Meringue

  • 4 egg whites
  • 1 tbsp sugar
  • 100 g (3,5 oz) coconut flakes
  • 90 g (3 oz) parched chopped nuts

Hard sauce

  • 4 yolks
  • 200 g (7 oz) sugar
  • 250 ml milk
  • 800 g (28 oz) dairy butter
  • 4 marshmallows
  • 300 ml marmalade

Cooking

Dough

Beat the eggs. Add sugar and oil. Whip up the ingredients. Then add leaven, cocoa, flour, salt and soda. Knead dough. It should have the consistence of thick sour cream. Roll out pastry and bake 2 pie shells. You can bake 1 pie shell and then divide it into two.

Meringue

Beat up the egg whites. Add sugar gradually. Whip up everything properly. Add coconut flakes and nuts. Mix the ingredients accurately. Dry the meringue until it becomes hard.

Hard sauce

Beat egg-yolks with sugar. Bring milk to boil and pour it to the egg-yolks. Stir the ingredients constantly. Bring the mass to boil over medium heat. Then cool it. Warm butter to the room temperature and beat it up. Add one by one tbsp of the prepared mass to butter.

Slice along marshmallows and marmalade.

Tip! Cook pliatsok twenty-four hours before serving in order to let it soak properly.
