Pork and Pumpkin Cutlets

You can serve these mouthwatering cutlets as a starter or a side dish or an evening snack. They are perfect for small parties and get togethers. Your guests and family will simply love the cutlets.

First of all, they are rather easy to cook. Secondly, they have an unusual taste thanks to the delectable combination of pumpkin and pork, crispy from outside and soft from inside. The cutlets are lightly flavored with fresh parsley, black and red ground pepper. Who could resist such a temptation ?

Ingredients:

  • 2 eggs
  • 3 bulb onions
  • 4 cloves of garlic
  • 1 kg (2,2 lb) pork
  • 300 g (10,5 oz) pumpkin
  • vegetable oil (for frying)
  • breadcrumbs (for coating)
  • red ground pepper – to taste
  • black ground pepper – to taste
  • fresh parsley – to taste
  • salt – to taste

Cooking

Peel a pumpkin, remove the seeds and dice it. Cut pork into cubes. Peel bulb onions and slice them. Peel garlic cloves. Combined the prepared ingredients and mince them carefully. Then add raw eggs, black ground pepper, red ground pepper, salt, and chopped parsley. Mix everything properly.

Preheat vegetable oil in a frying pan. Divide the mixture into portions and shape each portion into round shapes. Coat the cutlets with breadcrumbs and fry on both sides till golden and crispy.
