Pork skewers in tomato sauce

Most of us enjoy barbecuing and eat easy-to-cook and at the same time tasty food. In summer we can make a dinner from simple ingredients just marinating the meat and grilling it over the coals. This recipe includes an awesome marinade that transforms pork into a flavorful-piquant meal on skewers. Imagine the combination of tender pork with flavorful tomato juice, onions, and different spices, such as coriander, paprika, black pepper, bay leaves, and more. The smell of such a meat grilling over open flames is really hard to resist. However, the taste is even better. This pork kebab in tomato sauce is finger licking delicious!

Ingredients:

  • 3 bay leaves
  • 3 little bulb onions
  • 1 l (liter) tomato juice
  • 4 medium bulb onions
  • 2 kg (70,5 oz) pork neck
  • ground black pepper – to taste
  • dry coriander – to taste
  • paprika – to taste
  • salt – to taste
  • whatever spices you prefer

Cooking

Rinse a pork neck under running water and cut the meat into medium pieces (4-4 cm).

Now let’s make the marinade for pork kebabs. Stir tomato juice with a spoon. Peel bulb onions, wash and cut them into circles.

Prepare spices – we’ll need salt, paprika, black ground pepper, dry coriander, bay leaves, and any spices you want or like. Mix the pork with the spices thoroughly. Then add the onion and stir to combine.

Pour the tomato juice above the meat (the juice should cover the pork completely). Let the pork marinate in a fridge for 24 hours. This allows the meat to fully soak up, get delicious flavors, and become soft and juicy.

Thread pork cubes and onion circles onto skewers. Put the skewers on a grill rack and fry the meat till cooked through, turning the skewers from time to time and sprinkling the meat with the remaining marinade.

Serve grilled pork kebab hot with fresh vegetables.
