One more recipe for potato and radish soup is especially for you. As we all know the potato soup is very useful and nourishing. Today we boil a creamy soup with radishes and various potherbs which are very useful for our organism.
- 350 g (0,77 lb) potato
- 100 g (0,22 lb) carrot
- 1 bulb onion
- 1 clove of garlic
- 1 bunch of radishes
- 1 bunch of basil
- 1 bunch of watercress
- 250 ml cream (high fat)
- 600 ml vegetable broth
- ground nutmeg – to taste
- salt – to taste
- ground black pepper – to taste
Cut leaves from radishes, wash and slice the radishes. Wash basil, watercress and chop them finely.
Peel potatoes, carrots and an onion. Cut the vegetables finely. Peel garlic and squeeze it. Toss the ingredients together.
Preheat dairy butter in a frying pan and fry the prepared mass there, stirring the vegetables continuously.
Combine broth and cream, mix and bring the mixture to boil. Cover the lid and boil over medium heat for 15 minutes. Add the prepared vegetables.
Puree the mixture in a blender till smooth. Add the basil and watercress. Blend the soup one more time. Season it with salt, pepper and nutmeg.
Warm the soup, pour it in soup bowls; add the chopped radishes and some basil. Serve the soup with toasts.
