Potato, Carrot, Cucumber, and Laminaria Salad

Laminaria is a very useful vegetable since it helps us stay young. Laminaria contains a lot of vitamins, macro- and microelements, including phosphorus, magnesium, ferrum, sodium, as well as iodine which is very essential for body functioning.

Today we are going to cook a piquant salad with laminaria and such vegetables as potato, carrot, pickled cucumber, beetroot, and onion. This salad is delicious and non-caloric and is a good solution for a light dinner. If you want to eat something tasty and at the same time healthy, then the recipe of this salad is just the ticket.

Ingredients:

  • 1 bay leaf
  • 1/2 tbsp sugar
  • 90 g (3 oz) carrot
  • 120 g (4 oz) potato
  • 40 ml vegetable oil
  • 90 g (3 oz) laminaria
  • 15 ml vinegar (30%)
  • 150 g (5 oz) beetroot
  • 60 g (2 oz) bulb onion
  • 90 g (3 oz) pickled cucumber
  • black ground pepper – to taste
  • cloves – to taste
  • salt – to taste

Cooking

Combine sugar, salt, cloves, and a bay leaf. Transfer the ingredients to a pan and top them with hot water. Boil everything for 10-15 minutes. Then cool the mixture and combine it with vinegar. Boil laminaria, cool it, slice and pour with the prepared marinade. Set the laminaria aside for 8-10 hours.

Wash vegetables. Boil carrots, potatoes, and beetroots. Peel the vegetables and chop them. Peel bulb onions and cut them finely. Dice pickled cucumbers. Toss all the ingredients together. Add sugar and the prepared laminaria. Adjust salt and pepper to your taste. Dress the salad with vegetable oil, vinegar. Mix everything carefully and serve.
