Potato, Champignon, and Pickled Cucumber Salad

This salad is so appetizing that you’ll want it in just seconds. Tender potatoes, crisp cucumbers, sweet red onion, and juicy champignons come together in this satisfying salad.  Vegetable oil dressing adds richness to the ingredients.

This salad will keep your stomach satisfied without increasing your waistline while offering a variety of health benefits.

Ingredients:

  • 5 potatoes
  • 1 red bulb onion
  • 3 tbsp cucumber pickle
  • 60 g (2 oz) champignons
  • 60 g (2 oz) pickled cucumbers
  • black ground pepper – to taste
  • vegetable oil – to taste

Cooking

Boil potatoes, peel them, and cut into cubes. Pour cucumber pickle above and set aside the potatoes for 8 minutes. Peel champignons and slice them. Peel a red bulb onion and cut into semi-circles. Combine the champignons and bulb onion. Brown the ingredients in a skillet.

Cube pickled cucumbers. Combine the potato, onion, mushrooms, and pickled cucumbers. Season the ingredients with vegetable oil. Then add black ground pepper, stir everything and serve the salad.
