Potato Lezhni (Potato Pie With Cabbage)

 

We offer you the recipe with an unusual name “lezhni”. In Ukraine this word means a potato pie stuffed with sour cabbage. However, there are other kinds of fillings as well. For example, mushroom, minced meat or fish stuffing. As you see, the used ingredients of the dish are simple, but lezhni go down a treat and are usually served on holiday in the north part of Ukraine.

Ingredients:

  • 4 eggs
  • 1/2 glass sour cream
  • 600 g (21 oz) potato
  • 1,5 cup sour cabbage
  • 100 g (3,5 oz) salt pork
  • 400 g (14 oz) bulb onion
  • sour cream (for serving)
  • dairy butter (for greasing)

Cooking

Boil potatoes, peel and grate them at once. Add raw eggs and stir the mass. Set it aside for a while.

Peel bulb onions, chop them finely. Preheat salt pork and brown the onion. Place sour cabbage in a separate frying pan, add some water and simmer the cabbage. Add the onion and continue to cook for 5 minutes. The filling is done.

Grease a baking sheet with dairy butter and place half of the potato mass there. Arrange the cabbage stuffing above. Cover everything with the remaining potato.

Bake the dish in an oven at 180°C (356°F) until crisp. Then cut the pie into portions and serve with sour cream.
