Potato roll with mushrooms

A good alternative to a traditional potato cake is a potato roll with mushrooms. It is more festive and has a really tender taste. Meanwhile you can cook the appetizer beforehand and keep it in a fridge.

Ingredients:

  • 1 kg (2,2 lb) potato
  • 2 whites of the egg
  • 500 g (1,1 lb) mushrooms
  • 1 little head of cabbage
  • 2 medium bulb onions
  • 1 medium carrot
  • ground black pepper – to taste
  • fresh parsley/ letture

Cooking

Peel potatoes and boil them. Drain the liquid. Mash the potatoes and while the mashed potatoes are still warm, beat in whites of the egg and season everything with salt.

Let cook the stuffing. Peel mushrooms, boil them slightly and then brown. Chop cabbage and stew it. Peel a bulb onion and carrot. Cut them finely and fry a little. Toss all the ingredients together.

Spread half of the mashed potato on a baking sheet greased with dairy butter. The layer thickness should be 1,5 – 2 cm. Place the prepared filling above. Top everything with the remaining mashed potatoes. Shape the roll by the help of a spoon.

Salt yolks and beat them. Grease the roll with the yolks. Bake the appetizer in an oven till golden brown.

Cut the roll into portions and decorate with chopped fresh parsley and lettuce before serving.
