Potato Soup with Calamari

If you have not yet cooked a potato soup with calamari, then give this dish a try and you will just love it. It is thick and hearty with rich squid flavour and just enough spiciness to tickle the tongue. This recipe is the best solution for a satisfying dinner or supper.

Unbelievably aromatic and delicious, this soup is an impressive crowd-pleaser.

This soup is recommended to serve with some pieces of crusty bread on the side.

Ingredients:

  • 1 lemon
  • 1 carrot
  • 1 tsp salt
  • 2 potatoes
  • 1 bulb onion
  • 1/2 celery root
  • 3 tbsp vegetable oil
  • 5 cups of vegetable broth
  • 300 g (10,5 oz) cleaned calamari (squid)
  • black ground pepper – to taste
  • fresh parsley – to taste

Cooking

Wash calamari carefully under running water. Cut the calamari into circles.

Rinse potatoes, peel and slice them. Wash a carrot and celery root. Peel and grate them. Peel a bulb onion and cut it into semi-circles.

Preheat vegetable oil in a skillet and place the carrot and onion there. Sauté the vegetables until they become soft and golden.

Pour vegetable broth in a pan and season it with salt. Bring the broth to boil. Add the potato and cook it over low heat.

Wash a lemon, dry it and cut in half. Squeeze juice from 1/2 of a lemon. Add 2 tbsp of lemon juice to the carrot with onion. Mix the ingredients and add them to the pan. Then add the celery root. Adjust black ground pepper to your taste. Add calamari and boil the soup until done.

Ladle the hot soup into plates. Decorate the dish with parsley and lemon before serving.
