Potato Soup with Tomato Sauce

If you like potato soups then you will like the recipe of this one. We are going to renew the recipe of a daily potato soup with the help of a delicious tomato sauce which we will cook together with you today.

The sauce includes combination of a leek, garlic, and tomatoes as well as basil leaves that add an unexpected flavor to the soup. Everything is simple yet delicious.

Ingredients:

  • 2 leeks
  • 4 potatoes
  • 2 bay leaves
  • 2 tsp olive oil
  • 2 cloves of garlic
  • 30 g (1 oz) dairy butter
  • 1 tsp ground lemon rind
  • 1 l (liter) vegetable broth

Tomato sauce

  • 1 leek
  • 2 tomatoes
  • 1 tbsp olive oil
  • 1 clove of garlic
  • 1 tbsp chopped basil leaves

Cooking

Combine dairy butter and olive oil in a pan. Add sliced leek and squeezed garlic cloves. Cook the ingredients for 3 minutes, stirring continuously. Then cover the pan with a lid and continue to cook for 10 minutes more.

Peel and chop potatoes. Add them to the pan. Put lemon rind and bay leaves in the pan. Pour the ingredients with the vegetable broth. Mix everything carefully. Cover the lid and cook the soup for 20 minutes.

Cool the soup slightly, pour it into a blender jug and whip until smooth. Set aside for a while.

Now let’s cook the tomato sauce. Preheat olive oil in a small pan. Add sliced leek and squeezed garlic cloves. Cook the mass for 10 minutes. Then add rinsed and chopped tomatoes. Boil the sauce for 10 minutes more, stirring continuously. Add basil leaves at the end of boiling,

Pour the soup into a soup plate. Top it with the tomato sauce before serving.
