- 250 g (0,55 lb) rice
- 1 chicken fillet
- 1 lemon
- 2-3 celery stalks
- 1 sweet bulb onion (big one)
- 1/2 chili pepper
- 6 tbsp olive oil
- salt – to taste
- ground black pepper – to taste
- vegetable oil (for frying)
Pour rice with 3 glasses of water, add 1 tsp of salt and boil the rice till done. Wash chicken fillet, dry it and cut in half. Fry the meat on both sides on vegetable oil. Place the cooked chicken on a napkin in order to let the fat drip. Set the meat aside to cool. Then dice it.
Wash celery stalks and cut them into medium pieces. Peel the onion and cut it into semi-circles. Place the vegetables in a salad bowl and add the chicken. Peel and cut a chilli pepper finely.
Cut a lemon in half and extract juice. Add olive oil to the lemon juice. Combine the mixture with salt and pepper. Stir everything properly. Nap the prepared salad and decorate it with chopped lettuce.
