We offer you the recipe of a delicious rice pie. The pie has a peculiar filling – marinated bell peppers, sweetcorn and olives combined with rice and grated cheese. The dish is rich, nourishing and can be served as a second course.
- 200 g (0,44 lb) rice
- 8-10 marinated bell peppers
- 1 tin of sweetcorn (420 ml)
- 1/2 bulb onion
- 100 g (0,22 lb) black olives
- 150 g (0,33 lb) corn flour
- 1/2 tsp leaven
- 1/4 l (liter) of milk
- 4 tbsp vegetable oil
- 250 g (0,55 lb) grater cheese
- a pinch of salt
- 2 eggs
Pour 1/2 liter of water in pan. Bring it to boil and then salt. Add rice, cover the lid and cook the rice for 15 minutes. Place the rice in a colander, wash it with cold water and let the water drip.
Peel and chop a bulb onion. Cut marinated bell peppers and black olives into circles.
Place corn flour, leaven and a pinch of salt in a bowl. Add eggs and vegetable oil. Knead dough.
Combine the dough with the prepared onion, pepper, sweet corn, olives, rice and grated cheese.
Grease a roasting pan with dairy butter and top it with flour. Put the dough there and flatten it.
Preheat an oven to 200°C (392°F). Bake the rice pie for 40-45 minutes.
