Roast Chicken with Mushroom, Cheese, and Breadcrumbs Stuffing

The New Year is the time when supermarkets are filled with festive ingredients. We are not going to miss such a moment. We are going to bake a juicy chicken with crispy skin. But that is not all. As you know stuffing can turn a standard roast chicken into something special. This whole roast chicken has an amazingly delicious filling composed of champignons, cheese, and spiced breadcrumbs.

What more can I say? This chicken looks so gorgeously that your family members and friends will be impressed when you put it on the table.

Ingredients:

  • 2 bulb onions
  • 7 cloves of garlic
  • 1 medium chicken
  • olive oil (for greasing)
  • 600 g (21 oz) champignons
  • 300 g (10,5 oz) hard cheese
  • 200 g (7 oz) spiced breadcrumbs
  • red ground pepper – to taste
  • salt – to taste

Cooking

Rinse chicken under cold water and pat dry with a paper towel. Wash and peel champignons. Then slice them. Peel bulb onions and chop them. Combine the mushrooms with the onion in a frying pan and brown the ingredients slightly. Add grated cheese and spiced breadcrumbs. Mix the mass carefully. Adjust salt and red ground pepper to your taste.

Stuff the chicken with the prepared filling. Fold the loose skin over the stuffing. Tie the ends together with the help of drumsticks.

Peel and squeeze garlic cloves. Add salt, pepper, and olive oil. Stir to combine. Grease the chicken with the prepared mixture on all sides. Place the chicken in a roasting tray and bake it an oven for about an hour at 220°C (428°F). Transfer the baked chicken to a serving plate. Decorate it with kitchen herbs and serve.
