Roasted Cheese, Bell Pepper & Tomato Salad

You know many recipes of salads with cheese and fresh vegetables but if you haven’t cooked a salad with fried cheese up until now, then you definitively should try to cook one with us today. Are you ready to start your day with a great summer dish? We will cook a nourishing warm salad which is also delicious and useful. Melted cheese is combined with soft baked bell peppers and fresh tomatoes. One more zest of this salad is its piquant dressing. We will mix olive oil, lemon juice, salt and pepper. Simply and yet tasty! Besides, the salad can be also served as a warm appetizer. Your family will like this warm vegetable salad for its juiciness and softness.

Ingredients:

  • 2 big tomatoes
  • 7 tbsp olive oil
  • 1 tsp lemon juice
  • 2 big red bell peppers
  • 200 g (7 oz) goat cheese
  • sunflower oil (for greasing)
  • a pinch of black ground pepper
  • dried dill – to taste
  • a pinch of salt

Cooking

Wash bell peppers and grease them with olive oil. Place the peppers on a baking sheet covered with foil and cook them in an oven until soft. Then transfer the vegetables to a plate, peel them and remove the seeds. Slice the peppers thinly. Wash tomatoes and slice them.

Combine olive oil, lemon juice, salt and pepper. Mix the ingredients thoroughly.

Cut goat cheese into large slices and place them in a bowl. Top the cheese with black pepper and pour with olive oil. Cover the bowl and place in a fridge for 2 hours.

Transfer the cheese slices to a baking sheet covered with foil. Bake the cheese in the preheated oven at 200°C (392°F) for 6-7 minutes.

Arrange the prepared peppers and tomatoes on a serving plate. Put the prepared cheese above. Pour the dish with the cooked sauce and top with dried dill. Serve the dish as soon as you cook it.
