Roasted Mackerel and Potatoes

This dish is an excellent idea for family supper. Golden potatoes baked until almost tender and soft fish in a lemon juice served straight out of the oven to your table.

The main component of this dish is mackerel, a tasty sea fish rich in omega-3 fatty acids and proteins. Hearty comfort meets healthy eating in this amazing recipe.

Moreover, this nourishing one-dish meal is very easy to cook and its recipe includes simple ingredients.

Ingredients:

  • 1 lemon
  • 1 mackerel
  • 4-5 potatoes
  • olive oil (for baking)
  • black ground pepper – to taste
  • spring onion – to taste
  • salt – to taste

Cooking

Wash and scale mackerel. Squeeze 1/3 of a lemon to get the juice. Rub the inside and outside of the fish with pepper and salt. Sprinkle the mackerel with a lemon juice.

Rinse and peel potatoes. Then cut them in halves. Cover a baking tray with foil. Transfer the mackerel there. Arrange the potatoes around the fish. Sprinkle the ingredients with olive oil and cover with foil. Bake the fish and potatoes in the preheated oven until done, about 45-50 minutes. Transfer the ingredients to a serving plate. Wash spring onions and chop them finely. Top the dish with the spring onion before serving. Cut the lemon into little triangles and decorate the dish with the lemon pieces.
