Roasted Potatoes with Salo & Garlic

What could be better than crispy potato, baked until golden and stuffed with tender salo and flavorful garlic?

Isn’t your mouth watering when you only start thinking about such a treat?

The preparation won’t take much of time and will become a perfect solution as a quick and nourishing appetizer for your guests or friends.

It is a simple yet tasty Ukrainian starter which will always come you in handy.

Ingredients:

  • 5 potatoes
  • 150 g (5 oz) salo
  • 5 cloves of garlic
  • black ground pepper – to taste
  • fresh thyme – to taste
  • spring onion – to taste
  • salt – to taste

Cooking

Wash potatoes carefully (do not peel them). Make deep cuts in each potato. Peel garlic cloves and rub the cuts with the garlic.

Cut salo into medium pieces. Put the pieces of salo in the cut surface of  each potato. Transfer the potato to a baking tray. Bake the potatoes at 200°C (392°F) until done. Season the potatoes with black ground pepper, salt, and top them with the chopped thyme in 5 minutes before the end of baking.

Serve the potato hot with cut spring onion.
