- 1 kg salo
- 8 cloves of garlic
- 2 tbsp salt
- 1 tbsp mayonnaise
- ground bay leaves
- ground paprika
- fresh dill
- ground black pepper
- black-eyed peas
Wash out salo, dry it and divide into pieces 8 cm in lengtheach. Peel garlic and lard salo with it making cuts towards the skin. Mix mayonnaise, ground bay leaves, salt, ground paprika, ground black pepper and chopped dill properly. Then rub salo with prepared mixture. Place each piece of salo in a plastic bag. Then add 1 clove and 1 black-eyed pea in each bag. Tie the bags tightly in order to vent air. Then put salo in the second bag and after that in the third bag.
Bring water to boil in a big pan. Put plastic bags with salo there and boil salo for 2-2.5 hours. Add water from time to time in the pan.
Then cool salo in the bags. Place salo in the fridge for 2 days (don’t take out salo from the plastic bags). Then open bags and leave salo in the fridge for 1 day more.

Tip! You can use the lard which was formed during the boiling for cooking the main dishes.
