Slightly salted herring sandwich

Ingredients:

  • 1 fresh frozen herring
  • 1 tbsp of black peppercorns
  • 2 tbsp vinegar
  • 2 cloves buds
  • 1/2 glass of water
  • 1 red onion
  • 1/2 loaf of Borodinsky bread (a brand of rye bread with coriander seeds)
  • 3 tbsp horseradish
  • 1 fresh cucumber
  • 1 sour green apple

Cooking

Defrost the herring. Place it in a pan. Add black peppercorns and cloves buds. Pour the ingredients with water and bring them to boil. Then turn off the fire and add 1 tbsp of vinegar. Slice half of the red onion.

Cut off the head of the fish, fishtail, and the fins. Remove the entrails and the fish spine. Cut the herring. Place the pieces of the herring and the onion in another pan. Pour the ingredients with the cooked marinade and place them in a fridge for twenty-four hours.

Slice the second part of the onion. Scald it and marinade it. (combine vinegar, sugar, thyme, and warm water). Pour the onion with this marinade in order to cover it slightly. Slice apple and sprinkle it with lemon juice. Slice cucumber also.

Cut the bread into triangles. Grease it with sour cream and horseradish. Place a slice of herring above. Then add slices of the apple and cucumber. Decorate the sandwiches with red onion and dill.
