Sour Cabbage Soup (Kapusniak)

Kapusniak is a traditional Ukrainian dish the main component of which is sour cabbage. The cabbage imparts a special flavor and sourish taste to the soup what makes it so delicious.

As with most dishes, the recipes differ from cook to cook and from region to region. This kapusniak is made with mushrooms, carrot, potatoes, onion, and millet. Try to cook this hearty sour cabbage soup and you will not be disappointed.

Ingredients:

  • 1 carrot
  • 3-4 potatoes
  • 1 bulb onion
  • 1/2 cup of millet
  • 3 tbsp vegetable oil
  • 200 g (7 oz) sour cabbage
  • 500 g (1,1 lb) fresh mushrooms
  • black ground pepper – to taste
  • fresh parsley – to taste
  • fresh dill – to taste
  • salt – to taste

Cooking

Pour water in a pan and bring it to boil. Peel potatoes and dice them. Place the potato in the pan. Wash millet carefully and add it to the pan in 10 minutes.

Peel a bulb onion and cut it finely. Peel a carrot and grate it. Wash mushrooms, peel and slice them.

Preheat vegetable oil in a skillet. Put the onion, carrot, and mushrooms there. Stew the ingredients until they become tender. Add the stewed ingredients to the pan. Then put the sour cabbage to the pan. Continue to boil the soup.

Wash fresh parsley and dill. Cut them finely and place in the pan. Season the soup with black ground pepper and salt.

Transfer the pan to your table. Cover the pan with a lid and set aside the soup for a while to let it get an earthy taste.
