Ukrainian drink Varenukha

In ancient times this alcohol drink was served in Kyiv instead of wine. The guests were usually treated with a rouse of vodka. Then varenukha in mugs was served.

The main components of varenukha were spirit, dried fruits and spicery.

It was poured in the specially prepared pumpkin (with cut hole), which added a special soft flavor. Then varenukha was draw for some hours in the well preheated hearth.

The national drink was served hot with baked apples as a chaser.

Ingredients:

  • 500 g dried fruits (apple, apricot, pear, plum)
  • 3 l water
  • 400 g sugar
  • 500 g honey
  • 5 bay leaves
  • 5 g cinnamon
  • 5 g cloves
  • 5 g ginger
  • 5 g cardamom
  • 5 g nutmeg

Cooking

Wash dried fruits and pour them with warm boiling water. Leave fruits for 6 hours. Then add sugar and boil the fruits until done. Filter the drink.

Add honey and spicery (bay leaf, cinnamon, cloves, ginger, cardamom, nutmeg). Boil varenuha for 10-15 minutes. Draw the drink for 4 hours and filter it.
