Varenyky with Chicken and Champignons

 

Varenyky are so popular among Ukrainians and there are dozens of recipes for varenyky and their fillings. Today we are going to cook dumplings with chicken and champignons.

These varenyky are tasty, tender, and very nourishing. They will become a good solution for those who need to cook a dinner for a big family. Assure you, your relatives will remember this dinner in the Ukrainian style for long. I should think so. Who would not like flavorful varenyky with amazing filling?

Ingredients:

  • 1/2 tsp salt
  • 1 bulb onion
  • 800 ml water
  • 3 tbsp sunflower oil
  • 2 cups of wheat flour
  • 300 g (10,5 oz) chicken
  • 150 g (5 oz) champignons
  • 30 ml sunflower oil (for frying)
  • black ground pepper – to taste

Cooking

Sift flour and combine it with salt. Pour 3 tbsp sunflower oil above. Then add 800 ml of hot water (65-70°C/149-158°F). Knead tough dough. It should have elastic consistency and should not stick to your hands. Leave the dough for 30 minutes.

Let’s cook the filling. Peel, wash, and chop a bulb onion. Pour sunflower oil on a frying pan and fry the onion until golden. Peel, wash, and cut champignons finely. Add the mushrooms to the onion and stir the ingredients for 5-7 minutes.

Boil chicken and chop it finely. Combine the meat with the onion and champignons. Adjust salt and pepper to your taste. The filling is done.

Roll the dough and cut out the circles with the help of a cup. Arrange the filling above each of the circles. Fold the dough over the filling and crimp the edges tightly. Repeat the procedure until you use all the ingredients.

Bring water to boil, salt it, and add varenyky there. When the dumplings will come to the surface, cook them for 7-10 minutes more.
