Varenyky With Sour Cabbage (Old Ukrainian Recipe)

Today we offer you one more recipe of Ukrainian varenyky stuffed with sour cabbage. The piquant taste of the sour cabbage imparts some special zest to the whole dish. If you want to cook a Ukrainian dinner for your quests, this recipe will come in handy.

Ingredients:

  • 1 egg
  • 1 bulb onion
  • 1 glass wheat flour
  • 4 tbsp sunflower oil
  • 150 g (5 oz) sour cabbage
  • black ground pepper – to taste
  • sour cream – to taste
  • nutmeg – to taste
  • salt – to taste

Cooking

Put sour cabbage in a pan, pour it with water and boil until soft. Place the cabbage in a colander and let drain. Cool the cabbage and set aside for some time.

Peel a bulb onion, dice it and sauté in sunflower oil. Add the cabbage, nutmeg, salt and black pepper. Stir the ingredients.

Let’s cook the dough. Combine flour with salt, add warm water and an egg gradually. Mix everything properly. Then pour 3 tbsp of sunflower oil above and knead the dough one minute more. Place the prepared dough in a fridge for half an hour.

Roll out the dough, take a cup and cut out the circles. Put the cabbage stuffing above each circle. Fold the dough over to cover the mixture and crimp the edges. Repeat the procedure until you use the dough and the cabbage stuffing.

Cover the prepared varenyky with a napkin and leave for a while. Boil varenyky in salted water.

Transfer the cooked varenyky to a plate and serve with sour cream.
