Vegetable and Egg Salad

This salad is a perfect idea for any get-togethers. It is bright and delicious. It is nourishing and piquant. Moreover, its recipe is very simple and time-saving. Your relatives and friends will like the dish and ask you to share the recipe.

Boiled and fresh vegetables are perfectly combined with hard-boiled eggs. Fresh cucumbers and spring onion make the salad crunchy and refreshing while beetroot and tomatoes are a colorful addition to this vegetarian egg salad.

Ingredients:

  • 2 eggs
  • 1 potato
  • 1 beetroot
  • 2 tomatoes
  • 2 cucumbers
  • spring onion – to taste
  • mayonnaise – to taste
  • salt – to taste

Cooking

Wash cucumbers and tomatoes. Cube the ingredients finely. Hard boil eggs. Dice the eggs. Boil a potato, peel and chop it. Wash spring onion and cut it finely. Boil a beetroot, peel and slice it finely. Mix all the ingredients together. Dress them with mayonnaise and season with salt. Stir everything again. Place the salad in a fridge for 30-40 minutes.

Take a baking form and form the salad in the shape of a tower. Decorate the salad with chopped spring onion and cucumber slices before serving.
