Vegetable aspic

Kholodets is a well-known dish in Ukraine. However the Ukrainians cook not only meat or fish aspic but also veggie one. This vegetable aspic is light and useful. You may serve it as garnish to the main dish or simply cook it when you want to have a healthy snack.

Ingredients:

  • 1 bulb onion
  • 1 carrot
  • 300 g (0,66 lb) cauliflower
  • 1 middle vegetable marrow
  • 3 bell peppers (of different color)
  • 3 tomatoes
  • 500 g (1,1 lb) champignons
  • a bunch of basil
  • 30 g (0,07 lb) gelatin
  • salt – to taste

Cooking

Wash vegetables. Peel a carrot and cut it in the form of flowers or stars. Divide cauliflower into curds. Peel a vegetable marrow and cut it into circles. Peel bell peppers and cut each pepper into three parts along then cut these pieces into slices. Take tomatoes and cut out the pedicles. Cube the tomatoes. Peel a bulb onion. Wash basil and chop it.

Pour 1 liter of water in a pan. Bring water to boil. Place the whole bulb onion in a pan. Add salt and cook the onion for 3 minutes. Next add the carrot, cauliflower, pepper and marrow. Boil the ingredients for 10 minutes. Turn off the fire. Take out the onion. Pour the hot vegetable broth in a separate bowl. Dissolve gelatin there. Let the broth cool a little.

Place the vegetables in a form for aspic. Add the raw tomatoes. Top everything with chopped basil and pour the ingredients with the warm broth. Place the vegetable aspic in a fridge for 2 hours.

Cut the dish into portions and serve.
