Vegetable Okroshka

Vegetable okroshka is a refreshing soup with kvass (beer-like non-alcoholic drink) and vegetables. This light, nourishing, and very tasty soup will enrich your body with useful elementss. It has a very easy and quick recipe.

Okroshka can be cooked with meat but today we are going to make a vegetarian version without meat. It will still taste great. The mix of fresh cucumbers, radishes, and dill imparts the soup freshness while the boiled potatoes, carrots, and eggs give it a rich taste.

 Ingredients:

  • 3 eggs
  • 1 carrot
  • 6-7 potatoes
  • 1 bulb onion
  • 2 tbsp sour cream
  • 4-5 fresh radishes
  • 3-4 fresh cucumbers
  • 1,5 l (liter) homemade kvass
  • fresh dill – to taste
  • mustard – to taste
  • sugar – to taste
  • salt – to taste

Cooking

Wash and boil potatoes and carrot. Peel and dice the vegetables. Rinse, peel, and chop carrots and radishes. Combine all the ingredients in a bowl.

Boil and peel eggs. Separate the whites of the eggs and yolks. Grate the yolks with sour cream and mustard. Then add finely cut whites of the eggs. Pour warm kvass above and stir to combine.

Pour the prepared mass above the vegetables and serve. The vegetable okroshka is done!
