Warm bacon and eggs salad

This warm salad is a yummy way to start your day. If you are tired of an omelet, you can cook this salad with crispy bacon and fried eggs for a breakfast. The salad is really “homely” and it will not take much time to cook. By the way the dressing served together with the salad gives it a savoury flavor.

Ingredients:

  • 3 eggs
  • 60 g (2 oz) bacon
  • 2 tsp lemon juice
  • olive oil – to taste
  • mustard – to taste
  • spring onions – to taste
  • vegetable oil (for frying)
  • black ground pepper – to taste
  • salt – to taste

Cooking

Combine mustard, olive oil and lemon juice. Stir everything well.

Dice bacon and sauté it on vegetable oil over low heat until crispy. Transfer the bacon to a paper towel and let drain.

Beat eggs. Season them with salt and pepper. Whisk the ingredients and pour in the skillet where you’ve already fried the bacon. Roast the eggs, stirring continuously.

Rinse and tear lettuce leaves. Wash and chop spring onions finely. Toss the ingredients gently to combine. Add the bacon and the eggs. Mix everything properly in a bowl. Drizzle the salad with the prepared dressing and toss to coat. Serve at once.
