Warm beef heart and mushroom salad

Beef heart is classified as a dietary product and sometimes is evaluated even better than meat. It doesn’t contain many calories, it is nonfat, but still rich in proteins, minerals and such vitamins as E, A and K. There are many recipes of various dishes and salads with beef heart. Today we will cook a nourishing salad with beef, mushrooms and marinated onions.

Ingredients:

  • 1/4 cup water
  • 1/2 tsp of sugar
  • 1,5 tbsp vinegar
  • 1/2 tin of sweet corn
  • 2 medium bulb onions
  • 200 g (7 oz) mushrooms
  • (girolles/ champignons)
  • 500 g (1,1 lb) beef heart
  • 2 tbsp fresh chopped dill
  • black ground pepper – to taste
  • olive oil – to taste
  • salt – to taste

Cooking

Peel bulb onions, cut them into semi-circles and marinade. Transfer the onion to a bowl, add vinegar, water and sugar. Stir the ingredients and place in a fridge for 1 hour.

Slice the beef heart. Heat olive oil in a nonstick pan. Fry the beef slices until cooked through. Place the meat to a plate and keep it warm. Rinse mushrooms, you may use girolles or champignons. The choice is up to you. Peel mushrooms, cut into slices and fry until golden.

Toss all the prepared ingredients in a salad bowl. Mix in chopped dill and sweet corn.

Adjust salt and pepper to your taste. Drizzle the salad with olive oil and toss to coat. Serve the dish warm.
