Calamari, Cabbage, and Mushroom Salad

This yummy seafood and vegetable salad will become an excellent starter for a Sunday party. It is light, flavorful, and crunchy. Moreover, this salad looks so appetizing that your guests will not resist the temptation.

Your relatives and friends will be surprised with the unusual ingredient combination.

Calamari, sour cabbage, carrot, and marinated mushrooms perfectly match each other. Such salad ingredients really let the calamari be the star of the show.

Ingredients:

  • 1 red bulb onion
  • 2 cloves of garlic
  • 2 tbsp lemon juice
  • 150 g (5 oz) carrot
  • 400 g (14 oz) sour cabbage
  • 500 g (1,1 lb) calamari rings
  • 200 g (7 oz) marinated champignons
  • vegetable oil – to taste
  • fresh parsley – to taste

Cooking

Rinse calamari rings. Boil water in a pan. Bring it to boil, salt, and add calamari rings. Cook them for 3 minutes. Let the calamari rings cool and slice them thinly.

Peel a bulb onion and cut it into semi-circles. Transfer it to a bowl and pour lemon juice above. Stir to combine. Peel and squeeze garlic cloves. Peel carrots, wash and slice them thinly. Rinse fresh parsley and chop it. Dice marinated champignons.

Combine all the prepared ingredients in a serving bowl. Add sour cabbage. Dress the salad with vegetable oil and season with salt. Place the salad in a fridge for 30-40 minutes before serving.
