Carrot and cottage cheese pudding

Delicious flavor and bright color of this pudding will definitely attract the attention of your family members. This pudding can be served as a sweet main course and as a dessert.

It includes cottage cheese which is a very useful product, especially for children. During the baking cottage cheese preserves all useful components which it contains. In addition, this dish includes one more very useful component – carrot, the vegetable which has lots of vitamins and microelements. As a result, we get both a tasty and healthy pudding that will like your kids.

Ingredients:

  • 2 eggs
  • 3 tbsp sugar
  • 3 tsp raisins
  • 3 tbsp semolina
  • 300 g (10,5 oz) carrot
  • 50 g (3,5 tbsp) dairy butter
  • 3 tsp chopped dried apricot
  • 500 g (1,1 lb) cottage cheese
  • sour cream – to taste

Cooking

Wash carrots and peel them. Place raisins and dried apricot in a bowl. Pour boiling water above and set aside the bowl for a while. Preheat dairy butter in a frying pan. Add the carrot and stew it for 5 minutes.

Put cottage cheese in a blender and whip until homogenous. Then add raisins, dried apricot, and sugar. Mix all the ingredients carefully. Add the stewed carrot, semolina, and eggs. Stir everything again.

Grease a baking tray with dairy butter. Transfer the prepared mass there. Cover the top with aluminum foil. Bake the pudding until puffed and set, for 50 minutes. Let the pudding cool a little, top it with sour cream and serve.
